At Great Harvest Bakery and Café, we mill our own flour from non-GMO whole wheat kernels.
By milling our own flour, we can maintain all of the protein, fiber, vitamins, minerals,
and phytochemicals that the wheat kernel naturally provides.
Moreover, the freshness of our whole wheat flour allows us to bake without perservatives!

It is recommended that most healthy adults consume 6-8 one ounce equivalents of grains every day.
When at least half of those are whole grains, individualsbegin to see important health benefits,
including a decreased risk of heart disease, stroke, type 2 diabetes, hypertension, obesity, and colorectal cancer.

Great Harvest offers both breads and sweets that are made with 100% non-GMO whole wheat.

OUR COFFEE
Great Harvest Bakery and Café brews premium coffees from Caffé d’Arte, a company with generations of experience in roasting and blending artisanal Italian coffees.  Founded by Mauro Cipolla in the Seattle area, Caffé d’Arte is one of the few roasters to employ a post-roasting technique.

Caffé d’Arte starts by roasting single-source beans to stringent specifications of color and caramelization.  By treating varietal beans separately in the roasting process, Caffé d’Arte is able to extract each origin’s unique flavor.  Coffee craftsmen then employ their special knowledge of bean source and performance to create complex flavors and special characteristics for every coffee blend they make.  At Great Harvest Bakery and Café we serve Caffé d’Arte’s Meaning of Life® (Medium-Dark) and Campania® (Dark) blends, as well as a surprisingly rich Decaffeinated blend.

Caffé d’Arte coffees are kosher, certified fair trade, and certified organic.  You can enjoy them at Great Harvest Bakery and Café with peace of mind.

OUR WHOLE WHEAT
Fresh milled whole grains are at the heart of the foods we make and sell at Great Harvest Bakery and Café.  We start by sourcing non-GMO wheat from the arid high plains of Montana, an area known as the Golden Triangle and recognized as the best wheat source on earth.  As wheat connoisseurs, we like to stay that the Golden Triangle is to wheat what Napa Valley is to wine.

When this phenomenal wheat arrives at our bakery, it is in the same form as when it was harvested—kernels.  Our bakers then stone grind these kernels to produce fresh whole wheat flour in our own on-site mill.  All of the kernel is used, so none of the fiber, protein, B-vitamins, folate, iron, zinc, and magnesium are lost.  And fresh milled flour produces phenomenal tasting bread.  Furthermore, fresh milled flour enables our bread to last ten days or more on your counter wrapped in a bag without any preservatives!

OUR HONEY

Superior ingredients make superior bread, so at Great Harvest Bakery and Café, we don’t just use superior wheat, but we use a superior sweetener: 100% pure, Grade A honey from the beekeepers of Smitty Bee Honey, Inc. in Defiance, Iowa. Smitty Bee began a small operation by LaVern “Smitty” Schmitz in the 1950’s, and it has grown into one of the nation’s leading industrial honey suppliers in just three generations.  LaVern’s grandson serves as the company’s general manager, continuing his family’s commitment to running a clean and efficient honey production company.

To make our tasty breads and sweets, we use Smitty Bee’s amber light honey.  It’s medium hue lends our baked goods a subtle note of sweetnesses without sugar, corn syrup, or other low-quality sweeteners.

Smitty Bee’s honey is organic, kosher and non-GMO.  The company proudly adheres to superior food safety practices as evidenced by their Safe Quality Food (SQF) Level III certification.  You can purchase small jars of Smitty Bee honey on our shelves in the main dining area.

SEEDS
Pumpkin, sunflower, sesame, flax, and chia.  We love seeds!  That’s why we bake with seeds, top our toast with seeds, and even make a rich chickpea hummus with seeds.

Seeds yield surprising nutrition for such a small package.  Think about it: seeds contain the vital health reserves that sustain the early stages of plant growth and development.  When humans consume seeds, they are consuming all of those important reserves of muscle-building protein and gut-enhancing fiber.  Furthermore, each seed variety offers its own healthy profile.  Pumpkin seed are rich in magnesium; sunflower seeds pack a punch of vitamin E; sesame seeds boast three B vitamins; and flax and chia seeds are a good source of omega-3 fatty acids.
